Addison-Wesley is very strong on its Software Engineering and Ada texts.
Prentice Hall is very strong on its Computer Science texts.

I selected several Course Technology books last year, and I'm continuing to find Course Technology very good for the courses I teach in Web Publishing and Visual Basic.
O'Reilly, with its excellent series of Reference Books, was also there. I prefer not to try to teach out of O'Reilly books, but they are excellent references once you are comfortable with the material (and I recommend them to my classes).
